The estimates use per-kilogram footprints from Poore & Nemecek's 2018 Science meta-analysis of 38,700 farms across 119 countries — still the most comprehensive dataset ever assembled on food's environmental cost.
Water figures draw on Mekonnen & Hoekstra's global water-footprint database. Land-use assumptions follow EAT-Lancet planetary-health boundaries. Individual results are approximations, not audits — they're right about the direction, not the decimal.
